Do you know what makes a beetroot red?

We are currently growing beetroots in our garden here at the Opening Space Retreat. These startlingly purplish red-coloured plants make a vibrant addition to any vegetable plot. The chemical that gives beetroot or Beta Vulgaris its distinctive colour is Betacyanin. Interestingly, this compound is most effective in breaking up tumors. It is also a free-radical scavenger and an anti-oxidant.

Beets also contain magnesium, sodium, potassium and Vitamin C.

Beetroot also contains betaine, a strong supporter of cardio-vascular health which has even been found to lower blood pressure.

There are many ways to consume beetroot, for those who like beetroot nothing can top a borscht or beetroot soup. Also a good way to protect against liver disease is to juice beets with carrots. Be warned however that this mixture can lead to a very sudden need to use the loo and therefore is a great tonic for constipation!
